BBQ Char Appetizers

BBQ fondueOriginal Recipe by Grill Master Steve Adams

Tropical BBQ Fondue (serves 4)

1 Arctic char fillet (skin off) cut into 1” cubes (see Icy Waters)

1 Black River Angus Beef Steak cut into 1” cubes

4 jumbo shrimps peeled and deveined wrapped in 4 thin pieces prosciutto

4 – 1” x 1” x 4” pineapple spears

20-30 wooden skewers

Skewer one piece per wooden skewer

Grill

Preheat grill to medium high heat, brush grill with oil just before grilling

Grill all the skewers over medium direct heat (350-375) rotating skewers as needed until cooked to desired doneness

Soya Dip

1/4 cup soya sauce

1/4 cup light brown sugar

1/8 cup water

Mix all ingredients together well in a bowl

Serve as dip for the fish

Gorgonzola Dip

2 Tbsp gorgonzola crumbled

2 Tbsp whipping cream

2 tsp parsley chopped

Fresh ground pepper to taste

In a small saucepan stir in all ingredients and warm over medium heat

Serve a dip for the steak

Yogurt Dip

1/4 cup whipped cream

1/4 cup yogurt

To serve

Push cooked skewers into a pineapple or watermelon for presentation

Garnish the platter with various fruits and dips
