Curry Crusted Tilapia

tilapia

  • 2 (6-8 oz) fillets of Tilapia
  • 1 oz Curry Powder
  • Salt and Pepper

Cucumber Riata Salad

  • ½ English Cucumber
  • 1 tsp Lime (Juice)
  • ½ tsp Cumin
  • 1 sprig Mint Basmati
  • 1 sprig Coriander
  • 1 Scallion
  • 1 Tbsp Honey
  • 2 Tbsp Yogurt
  • 4 oz Cooked Rice

For Fish

1.Pat the Fish with a cloth to dry.

2.Season fish with Salt and Pepper.

3.Dredge lightly in Curry Powder.

4.Grill at 400 F for 6-8 minutes.
For Cucumber Riata Salad

1.Thinly slice English Cucumber.

2.Chop the herbs and Scallion.

3.Dice the Red Onion.

4.Add all ingredients in a mixing bowl and stir.

5.Season with Salt and Pepper.
