Grilled Kingfish with Papaya Seed Dressing

1 ½ pounds kingfish fillets
Marinate the kingfish in half of the papaya seed dressing for 20 minutes
Grill over medium direct heat for about 4 minutes per side depending on thickness
Fish will flake off with a fork when cooked
Drizzle papaya seed dressing over cooked kingfish

  • Papaya Seed Dressing
  • 1 Tablespoon papaya seeds
  • ¼ cup white wine vinegar
  • ¼ cup canola oil
  • 1?8 cup white sugar
  • 1 teaspoon salt
  • ¼ teaspoon dry mustard powder
  • 1 onion chopped
  • Blend in a processor to desired consistency
  • Divide dressing into 2 bowls
  • Vegetable Stack
  • 4 red onion slices ¼” thick
  • 4 sweet potatoes sliced ¼” thick
  • 4 slices of your favourite cheese
  • 4 slices pear ¼” thick
  • 4 small zucchinis thinly sliced length wise ¼” thick
  • 4 slices portabella mushrooms trimmed
  • 4 small skewers or a rosemary twig
  • 2 Tablespoons Paul Newman’s Italian Salad Dressing

Serves 4 about 25 minutesBrush both sides of sliced vegetables lightly with salad dressing
Grill over medium direct heat to achieve nice grill marks, flipping to desired doneness
To assemble the stacks: Stack one of each of the vegetables including the cheese in layers of your choice and pierce the skewers threw the top to hold everything together vertically
