Grouper Pitas with Greek Sauce

  • 2 grouper fillets (skin off)
  • 2 pita pockets
  • 4 small skewers of cherry tomatoes

Fixings: sliced red onion, shredded lettuce, fresh mint leaves, lemon wedges and olives

Greek Sauce
Mix together ahead of time

  • 1 cup container of plain, unflavored Greek yogurt
  • 1/2 cup diced cucumber
  • 1 clove minced garlic
  • 1/2 tsp salt
  • 1/2 squeezed lemon

Brush grouper with olive oil and salt and pepper both sides. Grill fish over medium direct heat (350-375) until the fish flakes with a fork. Grill cherry tomato skewers. Toast pitas for 15 seconds per side and cut in half to create a pocket

To serveĀ 
Place grilled fish in pita pocket; add sliced onion, lettuce, olives and Greek sauce; top with grilled cherry tomatoes and mint.
