Lobster Burger

Steak and Lobster Burger (serves 2)

1 small lobster tail about a 1/2 pound grilled

2 Black River Angus Beef Steaks

2 fresh white hamburger or Kaiser style buns

1 Tbsp garlic butter melted

6 small leaves of artisan style baby lettuce

Lobster Topper

1/2 cup cooked lobster meat chopped

2 Tbsp mayonnaise

Juice from 1 lemon wedge

Whisk mayonnaise and lemon together

Fold lobster into mixture

Grind salt and pepper to taste

Grilling the lobster tail

Remove the digestive tract or tomalley from the tail by pulling it out and discarding

Use a sharp pair of scissors or shears to cut down the centre of the top of the tail shell

Stop cutting just before the end of the tail

Gently pull the shell apart to expose the meat

Brush meat with garlic butter

Grill meat side down over medium heat direct for 3-4 minutes

Cook shell side down for about 4 minutes or until meat is opaque in colour

Remove the warm meat from the shell and chop into 3/4″ pieces

Grilling the steak

Over medium high heat, grill steak for 2-3 minutes per side or to desired doneness

To serve

Brush the inside of the hamburger bun with garlic butter and grill for about 15 seconds

Place lettuce on the grilled bun

Slice steak sideways through the middle and place on the lettuce

Spoon lobster topper over steak

Add the bun top and secure with an olive and cheese skewer
