In a large sautee pan heat oil over med heat and add onions and garlic sautee till softened, @ 3 min. Stir in curry paste and coconut milk. Reduce heat to low and simmer 5 minutes to blend flavors.
Add snow peas and cook 2 minutes. Add redfish and simmer 5 minutes until cooked through. Remove from heat and stir in cilantro. Salt to taste and serve over rice.
Ok guys and gals, a quick note… I added a little sesame oil to the rice for scent and flavor along with some chopped scallions. Also if you are not a fan of spicy foods add a teaspoon of curry paste at a time to get desired flavor and heat. Don’t eat this meal if you have sunburnt lips – I do and they burnt for a while. The green beans can be blanched for a minute ahead of time if you prefer a green bean with less crunch and texture.
For beverage I had a nice thai beer such as “singha” but a dry white wine (don’t want an overpowering flavor) could work as well..
