Wahoo Nachos

Catch of The Day Nacho Platter (serves 4)

1 pound catch of the day Wahoo

1- Black River Angus Steak

I large bag restaurant style tortilla chips

Toppings

1/2 cup refried beans warmed

1 cup guacamole

1 1/2 cups salsa

1 1/2 cups cheese sauce warmed

1/2 cup sour cream

3 stalks scallions diced

1 cup lettuce coarsely chopped

1/2 cup pickled jalapenos sliced

1 cup grated sharp cheddar cheese

Guacamole

1 large avocado

1 Tbsp minced onion

Juice from half lime

Kosher salt and pepper to taste

Peel and coarsely mash avocado in a bowl

Add remaining ingredients and mix well

Salsa

1cup ripe chopped tomato

1 clove garlic minced

1/4 cup chopped onion

1/4 cup chopped cilantro leaves

Juice of half lime

1/4 tsp kosher salt

 

Cheese Sauce

1/2 pound or2 cup Monterey Jack cheese finely chopped or grated

1/2 cup milk

In a saucepan heat milk stir in cheese until mixture is heated and a smooth consistency

Grilling the fish

Grill fish over medium direct heat (350-375) until the fish flakes with a fork

Slice fish into bite size strips just before serving

Grilling the steak

Over medium high heat, grill steak for 2-3 minutes per side or to desired doneness

Slice into bite size strips just before serving

Carefully arrange tortilla chips on a large platter

Warm over indirect medium heat for 5 minutes

To serve

Spoon refried beans over warmed tortilla chips

Pour warmed cheese sauce over the chips and beans

Evenly spread the guacamole, salsa, sour cream, onions, lettuce and jalapenos over surface

Arrange sliced steak and fish over surface and top with shredded cheese
