Wok It To Me Snapper

  • Prepare rice first, cover and set aside
  • 2 snapper fillets or pieces skin off
  • Cut snapper into 2″x 2″ x 3/4″ thick pieces
  • Squirt with fresh lemon juice, salt and pepper both sides
  • 1 tsp vegetable oil
  • Heat wok over medium high heat, add oil and swirl around wok
  • Wok fry fish to golden brown flipping as necessary
  • Add lemon sauce to wok until warm carefully turning fish
  • Serve mixture over rice
  • Lemon Sauce
  • 3/4 cup water
  • 1/4 cup lemon juice
  • 3 Tbsp brown sugar
  • 3Tbs white corn syrup
  • 1 ½ Tbsp cornstarch
  • 1 tsp chicken bouillon
  • 1/8 tsp minced ginger
  • 1/2 tsp lemon zest
  • Mix all ingredients in a sauce pan over medium heat, constantly stirring for 5 minutes until thickened
  • Fried Rice
  • Prepare rice first, cover and set aside
  • 2 cups day old white rice
  • 1 tsp Sesame oil
  • 1 Tbsp vegetable oil
  • 1/4 cup onion diced
  • 1/4 cup red pepper diced
  • 1/4 cup frozen peas
  • 1 -2 Tbsp soya sauce

Heat wok over medium high heat, add oils and swirl around wok, stir in onion and peppers, stir in rice and peas, add soya sauce to taste, serve with chopped green onions.
