Grouper Mac & Cheese

Original Recipe by Grill Master Steve Adams

Appetizer Steak marinara bruschetta

Toss sliced grilled steak in warm marinara sauce; serve on a toasted garlic bread wedge

1 pound of grilled grouper fillet

4 cups cooked hot penne pasta

2 cups milk

2 Tbsp butter

1 Tbsp melted butter (for topping)

1/4 cup four

1/2 tsp salt

1 cup Gouda cheese grated

1 1/2 cups Gruyere cheese grated

3/4 cup Panko bread crumbs


Preheat clean grill to medium heat

Grill fish over direct heat for 2-3 minutes on each side or until fish flakes easily with a fork

Cut grilled grouper into 1 inch chunks and set aside

Mac & Cheese Sauce

In a large saucepan make the roux; heat flour and whisk in butter

Whisk in milk until mixture is heated and has a smooth consistency

Remove from heat and stir in 1/2 tsp of salt

Carefully fold the cheeses and grouper into the mixture

Fold all of the cheese sauce into the hot pasta until evenly covered

Pour the mac & Cheese mixture into a 9”x14” baking pan or individual baking pans

Sprinkle Panko bread crumbs over surface

Pour 1 Tbsp of melted butter over bread crumbs

Cook uncovered at 350-375 degrees over indirect heat for 30 minutes or until bubbling

To serve

 Slice into desired portions serve with steak marinara bruschetta
